Ingredients

    4 cups water
    1.5 cups diced sweet potato
    2 stalks celery, sliced thinly
    1 medium onion, diced
    1 cup sliced carrots
    2 cloves garlic, crushed
    1 packet knorr vegetable broth
    1/4 tsp fresh ground black pepper
    1 tsp salt (i used less)
    1/4 tsp alspice
    1 tsp paprika
    1/4 tsp cumin
    1 lg can black beans, drained and rinsed well
    1 medium can diced tomatoes


Directions

Start water heating on stove, add all ingredients except tomatoes. When vegetables are tender enough, add tomato and continue to simmer on low until satisfied the flavours are blended enough.

Serving Size: Makes approximately 6 1.5-cup servings
