This is a yummy warmly spiced dish. You can vary the amounts of spices to suit your tastes. This is a yummy warmly spiced dish. You can vary the amounts of spices to suit your tastes.

Ingredients

    1 T Safflower Oil
    1/2 C Red Onion
    1/2 C sliced Carrots
    1/2 C sliced Celery
    1 C Sweet potato chunks
    3 cloves Garlic minced
    2 medium size Tomatoes chopped
    2 C Vegetable Broth
    1 C Soy Milk
    2 tsp Cumin
    1T Turmeric
    1 tsp cayenne pepper
    1 tsp ground cinnamon
    1/2 C Pink lentils

Directions

Saute onion, carrots, celery and sweet potato in safflower oil (about 10 minutes) Add garlic and tomatoes. Saute additional 5 minutes. Add broth and soymilk and spices, bring to a boil. Cook for 20 minutes or until sweet potato is almost done. Add lentils and cook an additional 10 to 15 minutes. (Don't forget to rinse and sort lentils prior to adding them)

Makes about 4 one-cup servings

    I don't know what kind of lentils are in the photo, but red lentils completely mush up making a wonderfully creamy base. - 3/1/20
