Ingredients

    2 Eggs
    1/8 Cup Hot Salsa
    1/2 Poblano Pepper
    Adobo Seasoning
    1/5 Cup Mexican Blend Shredded Cheese

Directions

Preheat oven to 400 degrees f. Spray a pan and place the halved pepper on it. In a small bowl, whisk eggs, salsa, Adobo seasoning, and 1/2 the cheese. Fill your pepper "boat" with the mixture and bake for 15 minutes, or until done. Top with the remainder of the cheese and return to oven for 1 minute, or until cheese is melted. Enjoy!
