Introduction

This is a mega batch that I freeze. The calories are calculated without crouton or cheese. This is a mega batch that I freeze. The calories are calculated without crouton or cheese.
Number of Servings: 24

Ingredients

    32 cups of sliced vidalia onions
    2 heads of garlic chopped
    32 cups of homemade beef broth
    1/4 olive oil or fat skimmed from top of broth
    1 can of beer

Tips

Add extra calories for bread crouton and cheese. I heat soup in microwave, add slice of crusty bread in bottom of bowl, add hot soup and top with 1/4 cup of grated cheese. I broil for about 5 minutes. Heaven!


Directions

Melt fat
Add half of the onion and sauté and let caramelize
Add beer and broth and rest of onions
Simmer for 2 hours
