Ingredients

    1 Large Cucumber, peeled and cut into chunks
    3/4 cup frozen, unsweetened blueberries
    1/2 cup plain low-fat yogurt (you can use low-fat vanilla if you choose)
    1 tablespoon lemon juice
    1 tablespoon honey

Directions

Combine all ingredients in a blender and puree until smooth.

Serving Size: Makes 2 servings, approximately 1 cup each
