*Tomatoes, red, ripe, canned, wedges in tomato juice, 6 cup (remove)
Onions, raw, 1 cup, chopped (remove)
Zuccini Squash, 2 cup (remove)
Mushrooms, fresh, 2 cup pieces (remove)
Eggplant, fresh, 1.5 cup, cubes (remove)
*Cellery, Raw -1 Stalk, large (11" - 12" long) (64g), 1 serving (remove)
classico pasta sauce, 22 oz (remove)
Garlic, 4 clove (remove)
Basil, 10 leaves (remove)
*Italian Seasoning (SPICE), 4 tbsp (remove)
Salt, 2 tbsp (remove)
Hot Pepper Sauce, 2 tsp (remove)
1 Med. Green Bell Pepper, 1 serving (remove)
Tomato Paste, 1 can (6 oz) (remove)
Tips
This may make more than 16 cups but it will not make less. Adjust caloric count accordingly.
Directions

add eggplant sauté
add chopped onion, celery and garlic sauté
add in sauce, tomatoes and tomato paste
add the rest of veg and spices bring to boil.
Simmer for at least 1 hour
You can adjust spices and add more veg if desired. You can use any colour pepper if you don't like green. This is the way I happen to like it.
NOTE: the Classico sauce used here can be adjusted just adjust for calories. The one I use is Italian sausage, pepper and onions.
This can be frozen and rewarmed very easily. It also works as a lasagna sauce is simmered until thick, although the calorie count does increase and you would have to adjust.
