Ingredients

1/4 cup sugar
1/2 cup butter
3/4 cup honey
1 Tbsp. light olive oil
1 large egg
2 1/4 cups whole wheat pastry flour ( I like to substitute 1/2 cup of regular whole wheat flour for extra texture.)
2 Tbsp. ground flax seed
1 tsp. cinnamon
1/2 tsp. nutmeg
1/2 tsp. baking soda
1/2 tsp. salt
2 cups rolled oats ( I prefer regular not quick)
1 cup raisins
Directions
Preheat oven to 375 degrees.
Wash raisins and let stand in water.
Cream sugar and butter.
Warm honey in microwave so that it is runny, but not hot.
Add honey, egg, and olive oil to creamed sugar and butter and beat well.
Sift together flour, cinnamon, nutmeg, salt and baking soda. Stir in ground flax seed.
Stir dry ingredients into creamed mixture.
Drain raisins well and add to batter.
Stir in rolled oats.
Spray or lightly grease cookie sheet.
Drop batter by teaspoonfuls on cookie sheet.
Bake in a 375 degree oven for about 10 minutes or until lightly browned. Do not over bake.
Makes 36 cookies.
