    Kale, 6 cups, coarsely chopped
    Just Mayo brand vegan mayo, 2 tbsp
    Vegan Sour Cream, Non-Hydrogenated, 1 tbsp
    Orange Muscat Champagne Vinegar, 2 tbsp
    Agave Nectar, .5 tbsp
    Dill weed, fresh, 5 sprigs, chopped
    Olive Oil, .5 tbsp
    Garlic, 1 clove
    Salt, .25 tsp
    Carrots, raw, 2 small (5-1/2" long)
    Pepitas (optional)


*If you cannot find the Orange Muscat Champagne vinegar, any sweet vinegar like white balsamic or apple cider will work.


Peel and grate carrots. Set aside.
In blender or food processor combine all ingredients except for kale and carrots. Add water to thin out as you wish.
Toss with carrots and kale in a bowl, and add pepitas if desired.

Serving Size: Makes 4 1.5-cup servings
