Ingredients

    8 oz dried lima beans, soaked
    1 can condensed cream of mushroom soup
    1/2 yellow or brown onion, chopped
    1 cup shredded Colby and Monterey Jack Cheese

Tips

This can be seasoned any way you like. I add garlic salt, parsley or basil or Italian seasoning. You can try it with tomatoes, salsa, hot sauce, chili powder. It's really very versatile. Sour cream is a very tasty addition. If you want to add meat, it's really good with ham, sausage, beef or bratwurst. It's a very basic, nutritious soup that you can change in many ways. It can also be cooked on the stovetop. The beans take about an hour.


Directions

Place soaked lima beans in small crockpot or cook on stovetop, which takes less time. Cover with boiling water or vegetable stock. Simmer until cooked. Saute onions and mushrooms until onions are clear. Add to the beans. Stir in the condensed soup and any seasonings. Allow time to warm up. Add the cheese just before serving.
