Introduction

Ingredients

    2 c oatmeal
    1/2 c brown sugar, not packed
    generous 1/2 c craisins
    generous tbsp walnut pieces
    1 t baking powder
    1 1/2 c 2% milk
    1/2 c unsweetened applesauce
    2 T butter, melted
    1 lg egg

Directions

Preheat to 375F. Spray muffin pan with Pam. Combine all ingredients in a large bowl and mix well. Fill muffin pans nearly full - it doesn't rise much - and bake at 375F for 25 minutes. Allow to cool at least 10 minutes. These are also delicious the second day, and much easier to remove from the pan when they are completely cooled.
