Ingredients

    1 medium carrot, shredded
    1 medium small zucchini, shredded
    1 small onion, diced
    1 stalk celery with leaves, diced
    4 oz. mushrooms, diced
    3/4 cup bulgar
    2 tsp oregano
    1 tsp basil
    1.5 tsp salt
    .5 tsp pepper
    1 lb lean ground turkey
    28 oz. crushed tomatoes
    3 oz feta, crumbled

Tips

do not over mix and do not tightly pack the meatloaf
cover with foil during baking if feta starts to burn


Directions

small dice or shred all vegetables
mix all ingredients except tomatoes and feta
shape into meatloaf in a 9x13 pan
cover with crushed tomatoes
sprinkle with feta
bake in 350 degrees for 45-60 minutes.
