Ingredients

    1 lb uncooked sweet potatoes peeled and cut into 1/2 inch pieces
    1 lb uncooked lean only pork loin, cut into 1 inch pieces
    14 1/2 oz canned diced tomatoes, with green chiles
    1 medium garlic clove minced
    1/4 c unsweetened orange juice
    2 medium uncooked scallions chopped
    1/2 tsp table salt
    1/4 tsp ground cumin
    1/4 black pepper
    2 T fresh lime juice
    2 T fresh cilantro

    Combine ingredients in a 4 to 5 quart slow cooker and cook on low setting for 7 hours.
    Stir in lime juice and cilantro.

Directions

cook on low for 7 hours
