Ingredients

    •1 cup long-grain rice
    •1 large onion, diced
    •2 cloves garlic, minced
    •1 tablespoon smoked paprika
    •2-4 links chorizo (or other sausage), sliced
    •1 (14-oz.) can tomatoes, diced
    •6 cherry hot peppers from jar, diced

Tips

I used a jar of green chili's instead of the cherry hot peppers.


Directions

Cook rice. While rice is cooking, saute onion in a little oil over medium heat in large saucepan. When onion is soft, add garlic and paprika and saute for about 1 minute. Add chorizo and cook until heated through. Add tomatoes and hot peppers and cook for a few minutes until they lose their raw taste.

Over low heat, combine cooked rice and onion-sausage-tomato mixture. Add a little water if mixture is too thick to thin it out. Season with salt and pepper.
