Ingredients

    12 oz butternut squash cut into small chunks or shreds
    1 tbspoon olive oil
    1 1/2 cups chopped yellow onion
    2 garlic cloves
    1/2 cup dry pearl couscous
    1 cup water
    1 can cannelini beans 15 oz drained
    2 cups chopped kale stems removed
    1 quart chicken broth
    Salt and pepper to taste

Directions

Heat olive Oil in a 3 quart sauce pan over medium heat. Sauté onion and garlic. Add couscous broth and water bring to a boil. Add butter nut squash beans and Kayle. Reduce heat cover and simmer on low heat for 8 to 10 minutes
