Ingredients

    2 small onions, 1 chopped small and 1 chopped into larger chunks.
    250g chicjen breast
    100g patajs korma curry paste
    1tbsp oil
    1/2 can of coconut milk
    boiling water
    big handful of raw spinach

Directions

Fry onion in oil until soft. Cube chicken and fry too. Add curry paste, half cover with water and add coconut milk. Simmer for about 20 to 30 mins until sauce reduced. Throw in spinach and stir until it wilts. Serve with rice.
