Ingredients

    2 tbs olive oil
    3 tbs curry powder
    1 tbs cumin
    2 small onions, small chop
    2 cloves garlic, minced
    app 5 tsp ginger, grated
    salt and pepper to taste
    5.3 oz oikos plain nonfat greek yogurt
    1 cup skim milk
    1 cup lite coconut milk
    1 lb diced chicken breast
    1.5 cups diced potatoes

Tips

Very fragrant and the scent will linger for a while! like a day or two!!


Directions

heat oil to medium. add curry and cumin -stir for 1-2 minutes til fragrant. add onion, garlic and ginger. continue cooking 3-5 minutes. Add yogurt, milk and coconut milk. stir til combined. salt and pepper as desires. when boiling, add chicken and cook about 20 minutes. add potato and cook another 15 - 20 minutes until potato is tender. serve over rice. I use the coconut milk left in the can as part of the liquid in my rice.
