Ingredients

    ½ cup butter, softened
    ½ cup honey (or Agave)
    1 egg
    1 teaspoon vanilla
    1 cup natural peanut butter, creamy or crunchy
    1.5 cups oat flour (I ground rolled oats in my Ninja)
    1 cup rolled oats
    1 teaspoon baking soda
    ½ teaspoon salt

Directions

Preheat oven to 350. In a stand mixer, combine the butter and honey (or xagave) and mix for about one minute. Add the egg, vanilla and peanut butter and beat for another minute or until smooth.

In a separate bowl combine together the dry ingredients and mix. Slowly add the dry ingredients to wet and mix to incorporate.

Scoop dough into two tablespoon amounts and drop onto ungreased cookie sheet. Using a fork, press gently down on each ball of dough to make a checkerboard pattern. Bake at 350 for 10-12 minutes or until slightly brown.
