Ingredients

    1 cup quinoa (cook according to package)
    1 tbsp olive oil
    3 baby carrots, diced
    1/2 onion, diced
    1 egg, beaten
    1/2 c egg whites, beaten
    2 1/2 tbsp soy sauce
    1 1/2 tbsp teriyaki sauce
    3/4 tsp sesame oil
    1/2 tsp ginger
    1/3 cup frozen peas
    1/3 cup frozen shelled edamame

Directions

scramble the eggs. Add oil to pan and saute onions, add remaining ingredients and heat through
