Ingredients

    1 pound extra lean (15%) ground beef
    3/4 C. skim milk
    1/2 C. Parmesan Cheese, grated
    1 sleeve Saltine Crackers (unsalted tops) = 1 C. crumbs
    1/2 C. egg substitute
    1/4 tsp. salt (low sodium)
    1 dash pepper
    1 tsp. minced garlic

Tips

Amount of crackers should be enough to make 1 C. It usually takes about 1 sleeve of crackers.


Directions

Mix milk, egg substitute, Parmesan Cheese, minced garlic, salt and pepper. Blend well. Add beef and mix well; mix in cracker crumbs. Form into balls and brown in skillet until cooked through; add to sauce of choice. Simmer for about 30 minutes. Eat with pasta of your choice.
