Introduction
Have been making these for over 30 years. They are so easy and so good with applesauce and sour cream. One recipe makes 12 pancakes. I double it for us. Nutritional count is per pancake. Ingredients

3 medium raw potatoes, scrubbed and not peeled, cut into cubes
1/2 med size onion, chunked
3 med size eggs
1/2 tsp salt
1/4 cup flour
3 TBS dried or fresh chopped parsley
1 TBS olive oil to cook with
Directions
Put the raw eggs in a blender, then add the salt, the flour the onion, and about 3/4 of the potato chunks. Process well to incorporate. Then drop in the rest of the potatoes and the parsley, process just til big pieces are incorporated. You want a bit of texture left, but small enough to cook through.
Brush oil on griddle or in frying pan. Cook til bubbles show and it looks partway done. Then flip and cook other side. Keep in a warm oven while you make the rest (especially if you double or triple the recipe as I do for a big group)
Serve with homemade applesauce and light sour cream.
