Introduction

Ingredients

    1lb grams Flank Steak
    2Tbsp White flour
    2Tbsp oil
    2 large onions, sliced
    1 oz butter
    2 cloves of garlic
    1 red & 1 green pepper, seeded and finely chopped
    1 red chilli, seeded and finely chopped
    2 tsp paprika
    salt
    1tsp ground cumin
    14oz can chopped tomatoes
    1 1/4 pts water
    2 medium potatoes, diced
    2 Tbsp sour cream and parsley to serve

Directions

1. Toss meat and flour together. Heat the oil in a frying pan, add the meat andcook for 4-5 minutes to brown. Remove with a slotted spoon.
2. Add the onions and fry for 3-4 minutes until softened.
3. Add the butter, garlic, peppers and chilli and fry for a further 3-4 minutes. Return the meat to the pan, add the cumin, tomatoes and water.
4. Bring to the boil, cover and simmer for 2 hours, stirring occasionally. Add potatoes and cook for a further 30 minutes.
5. Serve topped with parsley and sour cream (optional)
