Fast and yummy dinner! Fast and yummy dinner!
Number of Servings: 4


    1 boneless/skinless Chicken Breast, (cut into 4 or more pieces)
    1 (14oz) can Great Northern Beans; drained & rinsed
    1 (28oz) can diced tomatoes; drained
    2 cups Mushrooms, whole or pieces
    1/2 c chopped green onion
    12 baby carrots, chopped
    1/4 c White Wine
    1/4 tsp Garlic powder
    1 tsp Garlic powder
    1 tsp Italian seasoning,
    salt & pepper to taste.


Using a non-stick skillet, cook chicken breast pieces in wine with 1/4 tsp garlic; cover & simmer over medium-high until cooked through. Add remaining ingredients; cover & simmer over medium heat for 20 minutes.

*If you're in the mood for more of a soup, add 1/4 cup more wine and 1 cup low fat chicken broth (not included in calorie count)

Serving suggestions:
Serve with zucchini parmesan or other oven-roasted vegetables, and italian bread, if desired
