Introduction

This is what I make for most breakfasts through the week This is what I make for most breakfasts through the week
Number of Servings: 1

Ingredients

    2 eggs beaten
    1 medium onion chopped
    1 can mushrooms, drained
    1 cup diced ham
    1 cup fresh baby spinach
    2 oz shredded cheese - I use cheddar
    Cooking spray
    salt and pepper to taste

Directions

Coat your frying pan with cooking spray and saute your onions and mushrooms until the onions being to carmelize.
Add salt and pepper to taste, then ham.
Cook ham until it is warmed through.
Add spinach and stir in pan until spinach wilts and reduces to 1/2 it's original volume.
Add eggs and begin mixing them through the veggies until the are cooked to your liking. I like my eggs well set. (Hate runny parts.)
Add the shredded cheese, remove from heat and put a lid on the pan to let the cheese melt
Enjoy!
