Ingredients

    3 bell peppers (variety is best), coarsely chopped
    1/2 red onion, coarsely chopped
    1 cucumber, coarsely chopped
    1/2 cup olive oil
    1/2 cup lemon juice (or to taste)
    1 cup feta cheese, crumbled

Directions

Chop all vegetables and place in large salad bowl. Pour olive oil and lemon juice over vegetables. Mix salad to coat vegetables with olive oil and lemon juice. Crumble feta cheese and mix into salad. Serve.

Makes approximately 15 1/2 cup servings.
