Ingredients

7 - Large Eggs
1 lb - Fresh raw asparagus (cut into 1" pieces)
1 medium sweet onion (chopped)
2 Tbsp - Extra Virgin Olive Oil
1/2 cup of half and half
3/4 cup of shredded cheddar cheese
1 tsp Garlic Powder
1/4 tsp Sea Salt
Tips
An even lighter version would be to use skim milk versus half and half. The half and half just makes it a bit fluffier.
I serve with 2 strips of turkey bacon and fresh fruit, for a light and healthy "anytime" meal.
Directions
Preheat oven to 350 degrees.
Heat oil in cast iron skillet on stove (med. heat). Add chopped onion and let it begin to soften (about 4 minutes). Add cut asparagus pieces and mix with oil and onion. Let soften for about 2-3 minutes.
In separate bowl, take eggs, half and half, garlic powder and sea salt and whisk until smooth and fluffy. Add cheese and whisk until thoroughly mixed.
Take egg mixture and pour over the asparagus, directly into the skillet. This should cover the entire pan. Let sit a couple of minutes, until you see the edges of the eggs are starting to pull away from the pan. The place entire skillet in the oven for about 20 minutes or until the center is cooked through and springs back when touched.
Serve while hot! Garnish with fresh parsley for a nice touch!
