Ingredients

    1 cup yellow cornmeal
    1/2 tsp salt
    1/2 tsp baking soda
    1/3 cup melted shortening
    1 cup fat free sour cream
    1/2 small can creamed corn
    2 eggs beaten
    1 cup shredded Mexican taco cheese
    1 small can chipotle peppers chopped

Directions

Heat oven to 375. Grease 10 inch cast iron skillet: place in oven while preparing cornbread batter. Combine cornmeal, salt, and baking soda: blend well. Stir in melted shortening: add sour cream, corn, and eggs, blending well. Add half of the batter into greased hot skillet. Sprinkle batter with cheese and chipotle peppers: cover with remaining batter. Bake at 375 for 35 to 40 minutes or until nicely browned.
