Ingredients

    1 package Sweet Italian Chicken Sausage (5 Links)
    1 8 oz package of Mushrooms, sliced
    4 oz Rotini or Penne Pasta
    4 tbsp Hunt's Roasted Garlic Tomato Paste
    1 tbsp Garlic Powder
    2 tbsp Basil
    2 tsp Mrs. Dash Garlic and Herb Seasoning
    1/2 cup frozen Green Peas
    1 cup Water (will use anywhere from 1/4 cup to entire cup)

Tips

You can cut the sausage down for a lower calorie count and add additional veggies like spinach, grape tomatoes, carrots, etc.


Directions

Slice mushrooms and peppers, reserve liquid from jar of peppers. Start cooking pasta per package directions. Cut each sausage link into 4 pieces and place into deep skillet on medium heat. Add liquid from peppers and cook until sausage is opaque.

Add Basil, Garlic Powder and Garlic and Herb Seasoning, stir, then add mushrooms and peppers. Add tomato paste and distribute through the mixture and begin to add water 1/4 cup at a time until it reaches a pasta sauce consistency. If you did not salt the pasta water, you can use it to keep your mixture at temperature. Cooking time is a total of about 15 to 20 minutes.

Place frozen peas in the colander so when you drain your pasta, you "cook" them. Once drained return the peas and pasta to the pot and pour the sausage mixture over it. Over low heat, stir for approximately 5 minutes until the pasta is coated and it all comes together.

Serve as it or sprinkle with parmesan or a small amount of mozzarella cheese.
