Introduction

Position oven rack 4" from heat source, prehead broiler. In small bowl combine all other ingredients and mix until paste forms. Place steak on rack set in broiler pan. spread mixture on top side only. Broil wntil steak is cooked to desired doneness, 5-6 minutes for medium rare. Let stand 10 minutes before sliciing. Ingredients

    3 tbsp Cilantro, raw,
    3 tbsp lime zest, grated,
    *1 tbspSesame Seeds,
    1/2 fl oz Lime Juice,
    *1 tbsp Balsamic Vinegar,
    *1 tbsp Soy Sauce, garlic, minced,
    1 tsp Sesame Oil,
    1 tsp Ginger Root,
    1 tsp coriander, ground,
    1/4 tsp red pepper flakes, crushed,
    1 tbsp Flank Steak,

Directions

Serves 6 people. The thinner you slice it the more tender it will be.

If the skirt steak is thicker than 3/4", broil it without the herb mixture for 3-5 minutes on one side: turn the steak and spread with the mixture and broil til done--about 5 minutes.
