Number of Servings: 12

Ingredients

    2 cups flour
    2 tsp baking soda
    2 tsp cinnamon
    1/2 tsp salt
    /4 cup vegetable oil
    3/4 cup buttermilk
    2 cups sugar
    2 tsp vanilla
    8 ounce can crushed/drained pineapple
    2 cups grated carrots
    3 1/2 ounces coconut
    1 1/2 cup chopped walnuts

    FROSTING (not calculated)
    8 ounces cream cheese (or butter), 2-874 cups confectionary sugar, 1 tsp vanilla and milk as needed.

Directions

Sift flour, BS, cinnamon and salt. Beat 3 eggs and add oil, buttermilk, sugar and vanilla. Mix well. Add flour mixture, pineapple, carrots, coconut and nuts. Stir well. Pour into 13 x 9 pan (or two 9" rounds)
