Ingredients

I 4 oz can tomato paste
1T Olive Oil
2T Bragg Liquid Aminos or Soy Sauce
1.5t dried oregano
1.5t dried basil
1 large or 2 small dry bay leaves, whole
1 large onion, chopped (about 1 cup)
1c celery diced
1c carrots diced
2 potatoes, large, diced
4c fresh cabbage (about 1/2 a small head) shredded
Directions
Prep instructions:
Chop Onion, celery and carrot.... line up spices
Heat Oil over high heat in soup pot
Saute onions over med-high heat once oil is hot until not quite clear... add celery and stir; crush oregano and basil in palm to release oils and add to pot, stir sauteeing until celery is crisp tender.
Add all other ingredients except cabbage and stir to combine. Bring to a boil, then turn down heat and simmer partially covered for 20 minutes, or more if you like the vegetables softer. Add cabbage, stir, and simmer covered for an extra 5 minutes. You may add more water if you like more broth.
Makes 4 servings.
