Introduction

Ingredients

Potato (1-2 small, any kind you like)
Fresh green leafy veggies (e.g. Kale, Spinach)
Eggs
Seasoning
Butter or oil
Tips
Potatoes aren't mandatory, but having a good root vegetable in the bottom helps to hold things together.
Experiment with your favorite veggies and seasonings.
Directions
Preheat oven to 350F.
Pan-sear/fry your potatoes in the butter until nicely browned. Season lightly (e.g. salt)
Using the same pan, wilt your chosen greens and brown/sear any other veggies you like.
Whisk all the eggs together in a dish that you can pour from. Season to taste (salt, herbs, etc)
Grease a muffin tin, and then place a layer of potatoes in the bottom of each cup. Add your greens and other veggies.
Pour the egg and seasoning mixture into each cup, filling to the top and even slightly bubbled if needed.
Bake for approximately 35mins, or until eggs are done. Let cool some before trying to remove them from the tin.
