Introduction

A light protein and herb filled salad that we change around often during the summer depending on what we have on hand. I like this version with the cucumbers! Ingredients

    Lentils Any color or type
    Cucumber About 1 American or 1/2 British cucumber
    Feta Cheese
    Shallots About 2 large
    Parsley Around 1 cup but more or less to preference
    Cilantro Coriander Around 1 cup but more or less to preference
    Lemon Juice
    Lemon zest

    Salt and pepper to taste

Tips

Drain your lentils well or the salad will be soggy. Other fresh herbs will work as well. Other types of onions would work. Any salty dry cheese would work.


Directions

Cook lentils or used pre-cooked.
Dice cucumber.
Mince shallots and herbs.
Crumble feta.
Zest your lemon before you juice it and add to the salad.
Mix everything together and add lemon juice before serving

Serving Size: Makes 8 side servings of around 1 cup or 100 grams
