Ingredients

    1 medium sized tomato
    30 ml white wine
    1 clove of garlic
    1 laurel leaf
    250 g. mushrooms
    2 tbsp olive oil
    1 shallot, finely chopped
    6 coriander seeds, crushed
    1 thyme twig
    1 tbsp lemon juice
    1 tbsp parsley
    salt and pepper to taste

Tips

Serve cold, as a side dish for dinner, or with whole wheat french bread as a lunch.


Directions

Preparation: carve a cross in the tomato, dip it in boiling water for 20 seconds and peel. Remove seeds and cut in pieces.
Procedure: Put all the ingredients except the mushurooms and the parsley in a pan with 125 ml water and bring to boil. Simmer for 10 mins. Add the mushrooms and simmer again for 10 mins. Remove the mushrooms with a skimmer and let them cool off. Let the marinade boil until about half of it is left. Pour over mushrooms and let it all cool off. Finish with finely chopped parsley (preferably fresh).
