Ingredients

    2 lb boneless chicken breast cut into 3 inch pieces
    1 onion, thinly sliced
    2 T cornstarch
    4 t curry powder
    3/4 t ground turmeric
    1/2 t salt
    1/2 large head cauliflower cut into florets
    2 cloves garlic, minced
    1.25 c plain Greek yogurt
    1/4 c chapped fresh parsley

Directions

Stir together chicken, onion, cornstarch, curry powder, turmeric, and salt in a slow cooker.
Add cauliflower, garlic, and 1/3 cup water.
Cover and cook on low 5 to 6 hours or until chicken is done.
Remove 1 cup cooking liquid from slow cooker.
Stir together 1 cup cooking liquid, yogurt, and parsley.
Add yogurt mixture to slow cooker.
Stir until blended.

Serving Size: makes 6 servings
