Number of Servings: 8

Ingredients

    Ground Beef, 80% lean, 1 pound
    Ground Turkey, leaner the better, up to a pound (adjust to taste)
    2 Egg, egg substitute or egg whites
    1 cup Panko
    1 cup frozen spinach (thawed and drained)
    1 cup shredded cheese (cojack works best)
    worcestershire sauce, 1-4 tbsp to taste
    Parsley dried, 1 tbsp to taste

Tips

I like to try to roll up the loaf on the wax paper, place the pan over the top, then pick up the cutting board and pan together to flip it over. Also add another dash of worcestershire sauce to cheese on top as it comes out of the oven.


Directions

Mix beef and turkey, add 1/2 panko and parsley
mix in eggs until well blended, add worcestershire
lay out wax paper on cutting board, spread meat mixture into rectangle, about 1 1/2 inch thick
add the thawed drained spinach and press into meat
add rest 1/2 panko and 1/2 cup cheese, spreading evenly over spinach
use the wax paper to fold over the meal lengthwise
transfer to pyrex lasagna pan, seam side down and form into loaf
bake 350 for 50 minutes or until meat is cooked to 165
add 1/2 cup rest of cheese and bake another 5-10 minutes until melted


Serving Size: makes 64 oz, divide into 8 8oz servings
