Ingredients

4 strips of bacon, cooked and crumbled
6 large eggs
1 cup 1% Milk
1/2 cup reduced fat shredded cheddar cheese
3 tbsp cream cheese cut into 12 pieces
2 jalepenos, one finely diced, the second cut into twelve even slices
1/2 tsp onion powder
1/2 tsp garlic powder
salt & pepper to taste
Tips
Silicon reusable cupcake liners are the best for this recipe.
Directions
Cook bacon separately and break into small pieces. Mix with one jalepeno very finely diced.
Beat six eggs in a large bowl for about 1 minute, then whisk in milk. Add onion powder, garlic powder, salt, and pepper. gently stir in bacon and jalepeno.
Add to a generously greased or silicon lined cupcake/muffin tin. Spoon in fritatta mixture about 2/3 full. Drop in each the piece of cream cheese, top with shredded cheddar cheese and 1-2 slices of jalepeno.
Bake in a 425F oven for 12-15 minutes or until egg is cooked through and firm and cheese is melted and browned.
Serving Size: Makes 12-15 cupcake sized fritattas
