Introduction

I found a recipe online and decided to tweak it a little. I do a combination of zucchini and carrots to help lower the "sugar" level. I did not count in the "fat" required to "fry" these to allow for choice. I found a recipe online and decided to tweak it a little. Ingredients

    3/4 Cup grated carrots
    3/4 Cup grated zucchini
    1 egg, scrambled
    salt and pepper to taste

    oil, grease, butter of choice

Tips

You can all a little almond flour or coconut flour if you like (adjust nutritional value). Serve with sausage and eggs, or as a side to a dinner entree like chicken.


Directions

1. Wrap the grated veggies in a think dish towel and squeeze to remove water. Heat skillet with hot oil.
2. Mix egg, veggies, salt and pepper.
3. Take a small handful, form a slightly flat ball and add to hot oil.
4. Press gently with a fork to flatten more. Keep them about 3 inches in diameter.
5. Cook 4 to 5 minutes per side.
6. Drain on paper towel and eat while hot or keep warm in a low oven and make another batch.

Serving Size: 4 3 inch patties
