Introduction

I LOVE "impossible" pies made with a baking mix. Sweet, or savory, you can whip one up in a matter of minutes. They're great for using small amounts of leftover meats and vegetables. For the sweet pies you can use canned pie filling or fresh fruit, or make your own fruit filling. You're limited only by your imagination! I LOVE "impossible" pies made with a baking mix. Ingredients

    1/2 c baking mix (Bisquick or store brand)
    4 large eggs
    2 cups milk (I used 1% milk)
    1 medium ear sweet corn, cooked and removed from cob
    1 c black beans
    2 Kirkwood Turkey w/chipotle pepper links, diced
    2/3 c shredded colby and monterey jack cheese
    103 grams fresh tomatoes, diced
    1/2 Hungarian Hot Yellow Wax Pepper
    salt and pepper to taste










Tips

Garnish with fresh cilantro if you like, or top portions with salsa.


Directions

In large bowl or baking pitcher, beat eggs well, add milk and seasonings, then whisk in baking mix.

Spray 10" pie pan with PAM. Combine corn, beans and minced pepper. Place diced links on top, then place sliced or diced tomatoes on top of that. Sprinkle shredded cheese over all, then pour egg mixture over top. Bake at 350 degrees for 35 min. or until custard is set.
