Introduction

Ingredients

    2.5 cups Oats, finely ground
    1 cup walnuts, finely ground
    1 cup fat free vanilla yogurt
    3 eggs
    3 mashed bananas
    1 pint fresh blueberries
    1.5 tsp baking powder
    .5 tsp baking soda
    (optional) 1 tsp cinnamon or pumpkin pie spice
    (optional) .5 cup sugar for sweeter muffins

Tips

This recipe is calculated without sugar. You can also use maple syrup or honey but use sparingly as the bananas are the sweetener.


Directions

Wash as set blueberries aside.
Heat oven to 375.
Grind up dry ingredients and combine in a large mixing bowl. Combine wet ingredients in a separate bowl (I use a stick blender). Pour wet ingredients into dry and mix together well with a spatula. Fold the fresh blueberries in last.
Grease a muffin pan with butter or any baking spray to your liking. Fill the muffin pan. There is enough extra batter to make a few more muffins, or I prefer to make a batch mini muffins. You should have enough batter for 12 minis.
