Ingredients

.5 lb Lamb, Cubed
.5 glass (3.5 fl oz) Red Wine
3 carrots
2 large red Onions
.25 cup Olive Oil
4 large cloves Garlic
1 cup green Lentils
3 large whole Tomatoes, red, ripe, raw, year round average
7 cups (8 fl oz) Chicken Broth
2 tbsp Paprika
1 tbsp Cumin ground
.5 tsp Cinnamon, ground
.5 tsp Nutmeg, ground
.5 tsp Thyme, ground
2 tsp salt (optional)
1 bunch fresh Parsley
1 bunch fresh Cilantro
Directions
-Brown the lamb in olive oil
-Deglaze with red wine
-Add finely chopped onions, garlic and carrots; cook for a few minutes till vegetables become tender
-Add green lentils, mix the preparation
-Add the tomatoes (priory pureed in a food processor)
-Add all spices, mix everything together
-Add chicken broth (you may adjust the consistency to your taste by adding a cup or 2 of water)
-Add parsley and cilantro (priory finely chopped in a food processor)
-Cook for at least 45 minutes or until the lentils are tender
Serving Size: 1 cup
