Introduction
This is a quick delicious way to use those green tomatoes, get your veggies and skip the flour and salt. The toasted flax seeds, onion, bell pepper and coconut oil add enough flavor that no salt or pepper is needed.This recipe cooks up in under five minutes on a grill and goes well with 2 tbsp ricotta cheese and a serving of my whole wheat kix seed bread. Ingredients

1 tbsp Coconut Oil
0.18 cup, chopped Onions, raw
1 tbsp *Flax Seed
1 serving Yellow Bell Pepper, 1 serving equals 1.8 oz or about 10 strips
1 serving tomato, green 1 med, raw (by MOHMAMA3)
Tips
Cook long enough to soften the vegetables, but not that they become mushy. Grind the flax seed into powder if you want a more flour like consistency to them.
Directions
combine flax seeds and water in a cup.(or grind flax seeds first and then add the water to that in a cup) Place coconut oil on medium heated grill and then add flax seed water mixture on top of it, flattened out. after about one minute, place green tomato slices on top of flax seeds, then add onion and bell pepper and saute about 2 minutes, then turn green tomato slices over and then saute everything another 2 minutes. ( the toasted flax seeds will stick to one side of the green tomatoes.)
Serve immediately with condiments of your choosing... I ate this with ricotta cheese and a whole grain seed bread roll today for dinner-very yummy and nutritionally sane.
