Ingredients

    Sweet potato, 1 sweetpotato, 5" long
    *Potato, raw, 3 medium (2-1/4" to 3-1/4" dia.)
    Garlic, 3 cloves
    Thyme, fresh, 1 tsp
    Pepper, black, .5 tsp
    *Milk, 2%, 10 fl oz
    Nutmeg, ground, .5 tsp
    Parmesan Cheese, shredded, 8 tbsp
    Bread, whole wheat (including toast), 1 oz
    Butter, salted, 1 pat (1" sq, 1/3" high)

Directions

Spray 9X9 baking dish (with cover like Corning ware) with Pam olive oil. Rub dish with cut garlic clove.

Peel sweet potato. Scrub russet or Yukon gold potatoes until clean. Slice potatoes in thin slices. I used a V-slicer for this--sometimes called a mandolin.

Place one half of white potatoes in bottom of dish, then one half of sweet potato in the next layer. Grind black pepper over the layer. Place another layer each of white potato, then sweet potato. Grind more black pepper over the top.

Mash and mince garlic.

Combine milk, garlic, thyme, nutmeg and butter in saucepan and heat until milk begins to steam. Be careful not to scorch.

Pour milk mixture over potatoes place lid on casserole.

Microwave 15 minutes.

Preheat oven to 400 degrees.
Place bread on rack to dry, then cool.

Place uncovered casserole in oven. bake 10 minutes.

Crumble bread and combine with parmesan cheese. Place on top of potatoes and bake 5-10 more minutes until lightly browned.

*Note: You can microwave the dish and not bake in the oven. We like the browned texture of the bread and cheese mixture. If you microwave only, be sure to cut the time by adding the bread mixture after the microwave period, then microwave for a few minutes to melt the cheese.
