Introduction

This is very yummy.. great for lunch or served with a side salad or BQ chicken for dinner. This is very yummy.. great for lunch or served with a side salad or BQ chicken for dinner.

Ingredients

    1 med Baked Potato
    1/4 cup of Krafts 2% mexican shredded cheese.
    4 Tbsp of salsa (I use mild Tostitos chunky style)
    2 Tbsp of reduced fat sour cream (my fav is breakstones brand)

Directions

Wash and dry potato wrap potato in foil, bake in oven for about 45 min at 350 . When done unwrap,cut open add cheese,salsa and sour cream and enjoy :)

    Incredible!
    I did half a potato with same amount of cheese and salsa. Only 1 tbsp sour cream, and then added some turkey taco meat I had left in the fridge. About 1 ounce. It was so yummy!!! My lunch for today. - 7/1/10
