Introduction
A pancake like batter poured over fresh berries and baking until puffed and golden brown. The fruit rises to the top, leaving a soft texture somewhere between custard and cake. Ingredients
1/2 Tbsp. Butter, unsalted
2 tsp. Cornstarch
3 eggs
1 c. Milk, 1%
2/3 c. Flour, white
1/4 c. Granulated Sugar
1.5 tsp Vanilla Extract
1/4 tsp Salt
2 c. berries of choice (or enough to cover bottom of 2 qt. baking dish - if using strawberries, halve before using)
Directions
Butter 2 qt baking dish wiith 1/2 tbsp. of same.
Dust berries with cornstarch til evenly coated and arrange to cover bottom of baking dish.
Combine remaining ingredients and whisk together to form a pancake - like batter.
Pour batter over berries, and place in preheated 350 degree oven for 50 minutes.
Claflouti is done when golden brown and set in the center. (will still be somewhat jiggly).
Serve warm. Dust wth powdered sugar if so desired.
