Introduction

Ingredients

    6 sheets filo pastry (not included in nutritional calculations as I couldn't find it)
    Oil spray or 1 tbl oil

    1/4 cup (30g/1oz) grated cheddar cheese
    1/2 cup (60g/2oz) grated smoked cheese
    1/2 cup (65g/2 1/4oz) grated Gruyere cheese
    3 eggs, ligtly beaten
    1/2 cup (125ml/4 fl.oz) low fat milk
    3/4 cup (185ml/6 fl.oz) low fat cream
    1tbl chopped fresh chives
    2tbl chopped fresh parsley

Directions

Preheat the oven to moderate 180c (350F/Gas 4). Lay out filo pastry on kitchen bench and cover with tea towel to prevent drying out. Remove one sheet and spray very lightly or brush very lightly with oil. Place another sheet of filo over it and do the same. Repeat until al the sheets have been used.
2. Spray or brush a 23cm (9inch) flan tin with oil. Line the tin with pastry, tucking in the edges.
3. To make filling: Combine all the ingredients in a bowl and mix well. Pour the filling into the tin and bake for 35 min or until the filling is lightly browned and set.

* If making small ones just use muffin tins or like.
