This is a huge hit in my house and provides a yummy, protein-rich, veggie-packed meal when the pizza craving hits. I've included the toppings that we normally use, but you can customize this just like you would a pizza. Ingredients

16 oz boneless, skinless chicken breast
Italian herb blend, to taste
1 cup Bell peppers (Green, Red, Yellow, Orange)
1 cup Tomato Sauce
1 cup Mushrooms, canned
16 slices Turkey Pepperoni
.5 cup Black Olives - Sliced
1 cup, chopped Onions
1 Cup shredded part-skim Mozzerella Cheese
Tips
We usually serve this over whatever kind of pasta noodles we happen to have.
Directions
Preheat oven to 350 degrees.
Place chicken breasts between two sheets of plastic wrap or in a plastic zip top bag.
Pound with a meat mallet or rolling pin until about 1/2" thick.
Place flattened chicken breasts into a glass baking dish.
Sprinkle with Italian herb blend.
Cover each chicken breast with 1/4 cup tomato sauce.
Distribute the rest of the toppings evenly on top of each flattened chicken breast.
Cover each "pile" of toppings with 1/4 cup mozzarella cheese.
Bake until chicken is done, 30-40 minutes.
Serving Size: 4 Servings - 1 covered breast each.
