Ingredients

2 whole large eggs
1/2 cup extra virgin olive oil
1/2 cup unpacked brown sugar
2 tsp pure vanilla extract
1 1/2 cups shredded/grated zucchini
1 cup all purpose flour
1/2 organic coconut flour
1/2 cup Ghirardelli unsweetened cocoa powder
1/2 tsp baking soda
1 tsp baking powder
1/4 tsp seasalt
1/4 tbsp Nestle Mini Chocolate Chips
Directions
Preheat the oven at 350
1. grate about 2 zucchini's - should yield about 1 1/2 cups grated zucchini. set to the side.
2. combine eggs, olive oil, sugar & vanilla extract in a bowl and mix well.
3. add the zucchini into the batter and fold in. set to the side.
4. combine all the dry ingredients in a seperate bowl and mix them well.
5. add all the dried ingredients into the batter and mix well. make sure you mix it well so you don't end up with dry lumps.
6. add the chocolate chips.
7. fill the muffin tins about 1/2 way - do not fill to the top as the muffins will rise.
8. bake at 350 for about 25 minutes.
Serving Size: makes about 15 regular sized muffins
