Introduction

Ingredients

4 1/2 tbsp Organic Coconut Flour (I used BetterBody)
1/2 cup Pure Pumpkin Puree
1/2 cup canned coconut milk (I used 365 Organic Coconut Milk)
1/4 cup light maple syrup (I used Aunt Jamima)
2 tbsp pumpkin pie spice
2 tbsp vanilla extract
1 dash seasalt
1/2 tsp baking powder
about 25 Ghiradelli Chocolate 60% Cacao Bittersweet Chocolate Chip
Xylitol (natural sweetner - to taste)
Tips
if you don't have pumpkin spice mix, you can substitute it by mixing 3 tablespoons ground cinnamon, 2 teaspoons ground ginger, 2 teaspoons ground nutmeg, 1 ˝ teaspoons ground allspice and 1 ˝ teaspoons ground cloves.
You can also add another type of zero calorie sweetner to taste. To ensure the cookies would remain low calorie, I didn't add a lot of maple syrup, so it might be a little too sweetless than most might like. To compensate, i added Xylitol (natural sweetner).
Directions
Preheat oven to 350.
1. mix all the ingredients together in a bowl.
2. using a teaspoon, scoop out some of the dough and place them onto a cookie tray. Each ball of dough should be no bigger than a quarter (coin).
3. using a fork, flatten out the dough in a cris-cross fasion. round them off if needed on the edges to make them more round.
4. place one chocolate chip in the center of each cookie.
5. bake about 20-25 minutes.
Serving Size: makes about 2 dozen small cookies
