Ingredients

1 tbsp Butter
2 medium yellow onions
1/4 tea salt
1/4 tea black pepper
1/4 dried thyme
1 large russet potato
1/2 zucchini
1/2 yellow squash
1 eggplant ( the long skinny kind not the fat ones)
3 plum tomato
1 tbsp Extra Virgin Olive Oil
1/2 tea salt
1/4 tea black pepper
1/4 tea dried thyme
1/2 cup parmesan cheese, grated
Tips
Do not omit butter and olive oil to save calories as these greatly add to the flavor of the dish. Spread out over 6 servings it's not even that many calories.

Directions
1. Preheat oven to 400 degrees.
2. Cut onions into small cubes and sauté in butter until golden brown.
3. Season onions with 1/4 of salt, black pepper, and thyme.
4. Spread onions evenly in 10" cake pan or a tian dish.
5. Slice all veggies into 1/4" slices. Do not peel any.
6. Arrange in pan in one layer alternating the veggies.
7. Top with remaining thyme, pepper, and salt.
8. Drizzle with olive oil.
9. Bake for 30 minutes covered with foil.
10. Remove foil, cover with parmesan cheese and bake another 30 minutes.
