Introduction

You can use any bean in this, and as much more spice as you like. You can use any bean in this, and as much more spice as you like.
Number of Servings: 2

Ingredients

    1 can black beans (1.75 cups)
    1 can yellow corn (1.75 cups)
    1 can diced tomatoes (1.75 cups)
    1 can olives, sliced or crushed
    1 medium onion, chopped
    minced garlic cloves to taste, or use granulated
    1 tsp Cumin (ground)
    1 tsp Chili powder
    1 small can of diced green chiles (or use chopped fresh chiles, or use Ro-Tel in place of the tomatoes, etc.)

Tips

We've made this with all different kinds of beans. It also doubles really well; just use a bigger pot.


Directions

Toss everything into a 2-quart pot and bring to a boil. Turn down the heat and simmer for about 20 minutes, until the onions are done enough for you.

Serving Size: Serves 2 to 4, depending on how hungry you are
